Attend daily pre-shift meetings before walking casino floor with previous shift bar porter for updates on what the bars need before taking over. Maintain radio contact throughout 10 hour shift, servicing 3 bars during weekdays, plus 3 to 4 portable bars during weekends across 100,000 sq. ft. casino floor. Prep beer coolers for portable bars on Thursday and assist bartenders stock on Friday and Saturday, rolling bars out within the hour of their arrival. Supply all bars through shift, including removing trash, washing glassware, and changing kegs. Assist managers with weekend orders by providing updated lists of product used and moving product from warehouse to casino floor.

Open restaurant with kitchen staff, first checking reservations and setting tables accordingly, moving on to assembling bar. Check all prebatch cocktails and prep more if necessary, followed by cutting fresh fruit for the day. Mix drinks for bar as well as tables for servers, assisting food running wherever needed. Answer phone for to-go orders as well as booking future reservations. Cut staff during slow hours and take on restaurant floor myself. Close restaurant, cleaning and prepping for tomorrow, counting drawer and logging all sales and emailing owner, Nick Pesola, before dropping cash into house safe.
